Sfakianopita is one of the most beloved traditional dishes of Crete. It resembles a crepe, but is made with pure ingredients and filled with unsalted white cheese, such as pechtogalo, xynomyzithra or fresh anthotyro – often with a combination of these. The dough is carefully rolled out on wood and baked in a non-stick pan without oil, with patience and frequent turning, until it acquires a light color and an inner melted cheese heart.
In the past, grandmothers would bake it on hot stones or in satsi, over the fire in the fireplace, giving it an even more special aroma.
